Spiced Sticky Ginger Cake Recipe

If there was a perfect time to eat a spiced, sticky Ginger cake, it'd be now, right? 


Ingredients you'll need:

175g Plain Flour

1 tbsp Ground Ginger

1 tsp Cinnamon

¼ tsp Nutmeg

1 tsp Bicarbonate of Soda

80g Treacle

50g Stem Ginger Syrup

70g Brown Sugar

75g Vegetable Oil

1 Egg

50g Stem Ginger (drained from syrup and roughly chopped)


For the Drizzle

50g Stem Ginger Syrup

50g Stem Ginger, Chopped



Here's how to cook up the magic! 


1. Preheat a fan oven oven to 175 degrees and grease a 2lb (21cm) loaf tin with a little vegetable oil.


2. Sift together the flour, spices and bicarbonate of soda in a medium bowl.


3. In a separate bowl, mix together the sugar, oil and egg, then add the treacle and ginger syrup and stir thoroughly.


4. Add the dry ingredients into the wet and combine.


5. Finally, stir in the chopped stem ginger.


6. Place in the centre of the oven and bake for 1 hour, checking with a skewer that it’s cooked through.


7. Remove from the oven and poke holes with the skewer, pour over the remaining 50g of stem ginger syrup and sprinkle with the chopped ginger.


Allow to cool before serving and enjoy!
